JAPANESE FRIED SHRIMP SANDWICH
Servings: 4
INGREDIENTS
Potato starch
4 shrimp, peeled and deveined
Oil, to fry
Batter
¼ cup milk
3 tablespoons flour
1 egg
Panko
Tartar Sauce
1 boiled egg, peeled
¼ onion, minced
⅓ cucumber, minced
4 tablespoons mayonnaise
1 tablespoon vinegar
4 bread rolls
Lettuce
Cabbage, thinly sliced
Tomato, sliced
Lemon, sliced
PREPARATION
1. Dredge shrimp thoroughly in potato starch and rinse with water.
2. On a cutting board, make four small incisions on each shrimp so that they can bend while remaining intact.
3. In a bowl, whisk the egg, flour, and milk.
4. Dredge shrimp in the batter, and then dip in panko to coat.
5. In a pot, heat oil to 170˚C/325˚F, and fry each shrimp for about 3 minutes, or until golden brown. Drain on a paper towel-lined plate.
6. Put a boiled egg in plastic bag and mash using your hand.
7. Put mashed egg in a small bowl and add onion, cucumber, mayonnaise, and vinegar. Mix well.
8. Make a cut in bread roll, and add a slice of lettuce, cabbage, tomato, lemon, and fried shrimp. Top with tartar sauce.
9. Enjoy!
